Quesadillas!
Looks like smoked chicken, shredded queso blanco, and bell peppers. Served with a mexi spinachish dip.

Skillet simmered chicken w/water, green chiles, onions and bell peppers.

Serving with homemade pintos beans. This time the pintos are flash cooked, boiled for 1 1/2 hrs with raw chopped carrots, drained and then mashed together. Mix with buttered to make Refried beans on the stove top. Adding 4 slices of American cheese at the end to make them extra cheesy.

Homemade pico. Dice: 1red onion, 5roma tomatoes, 2 fresh de-seeded jalapeños (a few seeds always make it into mine). Add 1/8 cup cilantro finely chopped, 1 - 10 oz can of Baja corn kernels. Mix it all together. Squeeze juice from 1/2 a lemon. Add 1/2 tablespoon salt. Mix again. Chill and serve cold.
